Bass Phillip酒莊上門來求酒出售的饕客,99%都是因為 Phillip Jones 的黑皮諾，其實上 Phillip Jones 自己也有種植及釀造其他葡萄品種。除了釀布根地白酒的Chardonnay，還有德國和鄰近法國阿爾薩斯的Gewurztraminer及鮮有人知它有Gamay。2001開始種植和釀造義大利北部皮孟貴族葡萄Nebbiolo，只有半個木桶的產量，Phillip Jones 說因為他太熱愛 Barolo，所以完全無對外出售的意思。既然 Bass Phillip 酒莊的聲譽由黑皮諾建立，四個葡萄園種植最多的自然就是黑皮諾。酒莊平均每年總產量3000箱（12瓶一箱），85%是黑皮諾，分4種級數，入門酒 Crown Prince 產1000箱，Estate 600箱，Premium 300至400箱，最佳的Reserve只有50至75箱。主要在於葡萄樹的樹齡
，以及釀酒用新舊木桶的比例，葡萄樹年紀愈大，用100%的新木桶釀成。1993年酒莊開始實施有機種植，2002年開始全面biodynamic。他說，葡萄園健康與否，很容易看得出來，「就看那些飛來的雀鳥、青蛙、甲蟲，就知道了。」
Phillip Jones 現今已年高80歲了，他個人不僅是葡萄園莊主，也是酒莊釀酒師，不像其他大部分酒莊分工。也沒有向外買葡萄補充自己葡萄園的產量，緊密合作呈現出農夫與釀酒師兩個人不同想法的結合，如果好酒出自葡萄園而非酒莊，那麼種植葡萄的人就遠比釀酒師更重要了。 從葡萄成長的諸般細節，到酒液釀製的每個步驟，Phillip Jones儘可能減少人為影響，讓萄葡忠實地呈現出真實與自然的樣貌 !
Pinot Noir，是最能反應風土條件的葡萄。在劉永智老師的《頂級酒莊傳奇3》書中提到，Phillip Jones 他本身也進口 Henri Jayer 的部份酒款來販賣，他本人表示他自己喝過數個年分的 Henri Jayer Richebourg，而 Phillip Jones 相當地謙遜低調風格，極像似一代釀酒宗師的風範!
Phillip Jones 為了解決澳洲土壤肥沃的困擾，採用了與布根地相同的高密度種植，降低產量是許多勃根地特級園的一半，量少質精。高密度栽種與低量收成；密集地栽植葡萄樹，讓它們爭搶養份，讓葡萄樹面臨生存養份的競爭，只能把根紮得更深更廣，才能存活。在這樣環境，每一株葡萄樹只能結出六到八串果實，加起來的重量還不到半公斤，產量珍貴而稀少。Phillip Jones 篤信釀酒師的工作只是承接上天的恩賜。他認為只要細心照料每一株葡萄樹，大自然就會把美好裝載到果實裡。

Bass Phillip • Crown Prince Pinot Noir 2013James Halliday Tasting Notes: Deep, slightly cloudy dark red colour with a semi translucent dark red hue. Lifted aromas of ripe dark cherries, plum and strawberry are followed by some meatiness, earthy leather like characters and spicy cedar. Rich and almost luscious this is a very generous medium weighted Pinot. Mouthfilling flavours of ripe dark cherries and strawberries sit alongside some dark plum overlaying spicy anise like characters and meaty cedar. Very spicy finish with velvet smooth tannins. Excellent power wave with a long aftertaste of spicy ripe dark cherries, plum, meaty anise and earthy cedar. Cellar 5-6 years..95 points • From James Halliday – Australian Wine Companion
First impression when tasting this Pinot noir by Bass Phillip is gameyness. Pale in colour, long in flavour and firmly structured around a long backbone of acidity. Lightly-flavoured stone fruits which play an important secondary role with fatty white meats and pasta. The gamey flavours persist to the end. Very European. Best drunk young, but will become richer over the coming six years.
液緣透著光若紅寶石閃耀，滿是活力的氣味撲鼻；果香與花香，黑櫻桃、覆盆莓、梅子、草莓、玫瑰與紫羅蘭，中度酒體單寧細緻，在滿溢的花果風味中透著清新與活潑。酒液如絲絹光滑，溜過舌尖與咽喉，餘味猶長。
