一家旗下葡萄園全部位於 Nuits St Georges 村莊，目前共擁有八塊 Nuits St Georges 一級葡萄園，能夠充份完整呈現Nuits St Georges 產區的特色。今天要介紹的就是最核心地塊,用”村莊名”直接命名”Climate名” ..其重要性可見!! 0.62公頃,可見年產量非常不到一桶,75年以上的老藤…一桶大約裝220瓶~240瓶左右
One of the oldest climates, this place was already planted in the year 1000. In 1023 it was given by Humbert, archdeacon of Autun, to the Saint-Denis chapter in Vergy; a barony to which Nuits was attached. It is said to have belonged to a Saint-Georges brotherhood founded by the Barbier de Peulle family in 1470. At the end of last century, Nuits was authorised to join its name to the name of the famous “Saint-Georges” vintage
說到勃根地的 Nuits Saint Georges 村莊就不能不提到 Chevillon 家族。Chevillon不只生產優美的美酒佳釀，所釀的酒品質也一直非常穩定。Chevillon 家族的釀酒歷史可追朔自 19 世紀，一開始只是將所種的葡萄賣給當地酒商，因利潤實在太低，成員漸漸被迫轉往其他行業發展。1968 年，剛退伍的 Robert Chevillon 與他父親 Maurice 一起照顧約 3 公頃大的葡萄園，收成都直接賣給酒商，直到1970 年代後期，才開始以自己酒莊名稱裝瓶，園區也從一開始的三公頃擴張到現在的十三公頃。
Maurice在 1985 年退休，Robert 正式接掌了酒莊，他的釀酒哲學是讓葡萄藤能自然地成長，因此許多樹藤都活到七、八十年之久；此外， Robert也不使用新式的釀酒法，依舊維持著傳統的風格。
酒莊現在由Robert 的兩個兒子 Bertrand 以及 Denis 兩個人負責，酒莊最頂尖的三個園區分別為 Nuits St Goerges Les Cailles ( 1.18公頃 )、Les Vaucrains ( 1.6公頃 ) 和 Les Saint- Georges ( 0.62公頃 ,也是葡萄地塊最小)。其中以 Cailles 最容易喝，而 Vaucrains 具有男子氣概及有結構，而 Les Perrieres” 則是最複雜且深沉。葡萄以手工採收，經歷 3-4 星期的浸皮發酵，在 16-18 個月後裝瓶，酒有著明亮的深紅寶石色，可以在年輕時候享用，但若能陳年 8-10 年，更具其風味。

The wood is somewhat more in evidence though again it’s not so much as to really compete with the plum, black cherry, dark currant and pungent earth-suffused aromas. This also possesses genuinely excellent volume and power as the broad-shouldered flavors possess both fine richness and seriously good mid-palate density on the mineral-inflected and palate coating finish. This has just a bit more acidity than the Les Cailles and it adds to the sense of vibrancy.
奔放的香氣包裹著甜美的紅櫻桃、鮮花、香料芬芳，混合而成層次分明的優美果實風味。此款 Les Saint Georges” 紅酒展現迷人的深度，純淨的個性帶來長又綿延的收尾。
