勃根地窖藏老酒最好傳奇酒莊之一 From Domaine Louis Remy 素有「布根地特級園之王」美名的香貝丹園（Chambertin）是哲維瑞香貝丹村（Gevrey-Chambertin）最具名望的頂尖特級葡萄園。香貝丹園最著名的品飲者莫過於拿破崙了，不論南征北討或是日常生活，他都離不開香貝丹葡萄酒！
西元1989年 Remy 家族將大部分在 Gevrey-Chambertin村內土地賣給 Lalou Bize-Leroy，形成今天 Domaine Leroy 的規模，但較不鮮人知的是 Remy 家族自己保留最後一小塊精華葡萄園地塊，沿續著家族一生釀酒的事業，現在由 Chantal Remy-Rosier 負責經營這座三公頃的小小酒廠
Louis Remy酒莊在布根地歷史悠久，早從西元1940年起就在此釀造純淨典雅的紅酒且有絕佳陳年潛力勃根地酒成名，葡萄園深層土壤豐潤，排水性極佳，種出風味濃郁的葡萄果實，其酸度完美的結實骨架與豐富迷人的水果風味相互輝映，葡萄酒勻稱和諧。
直到今日許多產自1960、1970年代的葡萄酒依舊保有十分可口的風味，直到現在 Domaine Louis Remy 繼續保有0.35公頃 Chambertin 特級葡萄園、0.58公頃Latricieres-Chambertin特級葡萄園、0.66 公頃位於Morey-Saint-Denis村的Clos de la Roche特級葡萄園、0.75公頃位於Chombolle-Musigny的一級葡萄園及少量的村莊級。
Domaine Louis Remy酒莊避免對土壤的破壞，全部農耕事務採取自然動力法來完成。堅持自古以來的傳統做法，晚收成，保留約一成的葡萄梗，用天然酵母釀酒，沿用40年傳統的垂直型壓汁機，以最輕柔方式處理葡萄，先在大型的舊木桶陳釀20個月，使用小比例的新桶培養，遵循傳統布根地釀酒方法，不經過濾不澄清，且採用手工裝瓶，經過兩年的培養才裝瓶，且大部分仍舊保留在酒窖中等候適飲期，直到 Chantal 女士認可，才得以釋出，由此可見Louis Remy酒莊對傳統的尊重及酒款的用心與投資。
酒莊堅持低新桶比例與傳統釀造，因此需要較長陳年時間來融合展現真正的風土樣貌。由於Chantal女士的堅持，希望每瓶酒都能帶給飲者最美妙的風味與熟成後的香氣，因此市場上看到的Louis Remy往往都至少超過5年，才能開始初勘酒莊的神秘無窮陳年後的魅力，展現最珍貴獨特的複雜度與優雅風格。

Domaine Louis RemyRobert Parker Tasting Notes: The 2003 Chambertin Grand Cru from Louis Remy is one of the finest red wines from this vintage that I have encountered in a long time( 試了非常久的時間,這是我試到2003年Chambertin 最好的一次). There is a sense of uncommon brightness and vivacity on the nose that disguises the vintage, macerated small red cherries, marmalade and strawberry preserve, youthful and well defined. The palate is fresh from the very start, extremely well balanced with fine tannin, gently building in the mouth towards a surprisingly crisp, elegant finish. Domaine Louis RemyRobert Parker Tasting Notes: The 2008 Chambertin Grand Cru from Louis Remy is imbued with much better delineation on the nose compared to the Latricières ’06 with bright raspberry and wild strawberry notes, allied with fine minerality. The palate is medium-bodied with crisp, slightly chalky tannins, well judged acidity and good tension on the rustic, “old school” finish. This is thoroughly pleasurable.
