如果今日的Meursault白酒可以變得如此清新，有大半的原因要歸功於莊主 Jean-Marc Roulot。為了保有足夠的酸味，他主張早一點採收，為了讓酒保有更乾淨的香氣與新鮮的活力，Roulot的酒很少進行攪桶，也沒有使用太多的新桶，經過12個月桶中培養後，為了讓酒款的水果風味清新鮮澈，白酒會連同酒渣一同移置大型不鏽鋼槽繼續培養六個月，最後經輕微過濾與濾清後裝瓶。值得注意的是，酒莊在裝瓶時會特意將較多的二氧化碳留於瓶中以保存葡萄酒的鮮度，同時拉長陳年潛力這讓他釀的 Meursault 白酒更常有清新的礦石香氣與銳利的酸味。現在，在村內已經有越來越多人跟隨這樣的腳步，例如 François Mikuski、Jean-Philippe Fichet等等，開始向 Guy Roulot 的風格靠攏，集純淨、澄透、直率、沁酸與礦物風味於一身，登峰造極的絕佳表現使梅索白酒愛好者愛不釋口!
其酒質水準直追 Comte Lafon，酒廠有五塊村莊級的地塊 【Les Tessons、Les Vireuils、Les Meix Chaveaux、Les Tillets、Les Narvaux】，海拔位於 250-300 公尺之間，土壤條件優異。因此會在酒標上特別標示地塊名稱【Lieu-dit】 ，酒廠追求的風格注重清脆酸度，細緻優雅，完全不做迎合大眾化甜美果香的夏多內白酒，集純淨、澄透、直率、沁酸與礦物風味於一身，登峰造極的絕佳表現使梅索白酒愛好者愛不釋口，可說是深受愛好勃根地老饕的青睞，我從未見過這麼出色的酒，它口感非常平衡、優雅且美味」。由於該年的氣候讓夏多內有更長的採收期，也不至於過熟，因此釀造出帶有漂亮酸度又有成熟香氣的酒款，而這樣如鋼鐵般的高酸，這就是我理想中的美酒 ！

Domaine Roulot Bourgogne Aligote 2014Allen Meadows – Burghound Tasting Notes: A super-fresh and overtly spicy nose is nuanced by citrus and white fruit aromas that precede the nicely detailed and vibrant flavors that culminate in a delicious and easy-to-like finish that is both clean and dry. Robert Parker’s Wine Advocate Tasting Notes: The 2014 Bourgogne Aligoté, which was bottled in July, has a terse, stony bouquet with scents of cold granite, quite steely and almost Puligny-like in style. The palate is a little shrill on the entry. There is good acidity here with sour lemon and freshly squeezed lime on the finish. (12/2015)

Domaine Roulot Meursault Villages 2014Allen Meadows – Burghound Tasting Notes: Here too the reduction is sufficient to make reading the nose difficult as all that can be discerned are citrus nuances. On the plus side there is a really lovely texture to the attractively punchy middle weight flavors that presently don’t have quite the depth that I’m used to seeing though there is fine persistence. More complexity will almost certainly develop provided this is given a few years of bottle age. (6/2016)
Robert Parker’s Wine Advocate Tasting Notes: The 2014 Meursault Village is mainly fruit from Clos de la Baronne supplemented by three smaller parcels that represent around 20% of the final blend. It has a brisk, stony, slightly reserved bouquet with touches of Granny Smith, granite and limestone. The palate is fresh and lively on the entry with a keen thread of acidity, and a slight bitter edge that appears on the mid-palate but coalescing nicely towards the tender finish. Domaine Roulot Meursault Vireuils 2012 Robert Parker’s Wine Advocate Tasting Notes: The 2012 Meursault Les Vireuils has a very complex bouquet with chalk dust, lemon balm and hints of Provençal wild herbs: very well defined and engaging. The palate is beautifully balanced with perfectly judged acidity, hints of melon and white peach with a strict but vibrant citrus and mineral finish. This is one of Jean-Marc’s best 2012s this year. Domaine Roulot Meursault Vireuils 2013 2014Robert Parker’s Wine Advocate Tasting Notes: The 2013 Meursault les Vireuils has a very succinct bouquet: cold granite, limestone, later a hint of freshly microwaved popcorn lending a hint of sweetness. The palate is taut and linear on the entry, setting the tone for a strict Meursault that only fans out right at the finish. It is beautifully balanced, much more primal and less generous than the Meursault, suggesting that it will need two or three years in bottle. Excellent – a Meursault that is cerebral as much as pleasurable.
Allen Meadows – Burghound Tasting Notes: There is enough reduction to mask the components of the nose though there is very good freshness and underlying tension to the agreeably textured and delineated medium-bodied flavors that possess really lovely precision on the clean, dry and ultra-pure finish where a touch of minerality appears.
