西元1943年 Scavino 家族將祖產葡萄園地塊一分為二,其中一個就是鼎鼎大名的 Paoolo Savino 酒莊, 另外一個就是 完售的”AZELIA酒莊”, Scavino 家族四代以來一直注重生產由當地葡萄品種釀造的高品質葡萄酒。如今酒莊由 Enrico Scavino 和他女兒Enrica 和 Elisa 一起努力共同管理 ,葡萄園面積全部只約23公頃，每塊面積都不大，分別坐落在Barolo不同區塊,且風土條件非常出色。主要以Nebbiolo、Barber 和 Dolcetto,堅信釀酒的核心理念認為從葡萄的種植和栽培,要比葡萄的釀造過程更重要，因為只有最好的葡萄才能釀造頂級高級葡萄酒，對於葡萄園的照顧不勝遺力,在有機自然重力法下,讓土壤和自然環境下融合!
Paolo Scavino 由1985年才開始釀造 Cannubi。Barolo Cannubi 特級園相信許多人都聽過，幾乎成為皮孟Barolo 酒莊的頂尖酒款代名詞之一，更不要說是出自釀酒藝術家Enrico Scavino之手 ,Cannubi這名字可以追溯到在18世紀，現存在Bra (Langhe的一個地方名)的一個舊酒甕在酒標上有寫著 Cannubi，年份是1752年。Cannubi 是Renato Ratti 的劃定10大頂級園內的其中一塊，重要程度有如布根地的Romanee Conti! Cannubi 充滿更多辛香料風味，結實又兼具甜美，單寧質地非常漂亮，尾韻很長，不枉Cannubi之名! 葡萄園高度達海拔385m,面朝東南部，土壤以深厚的沙石和鈣質石灰為主，下層以淺黃色砂礫為主。出品的葡萄酒以精細優雅型為特徵，整體平衡感非常好，質地柔軟，香氣豐富有層次多以玫瑰花瓣，紫羅蘭，丁香花，甜櫻桃，薄荷醇，礦物質等為主要香型特徵，陳年潛力強大!
Bric del Fiasc是 Piemonte 的傳統義大利方言，Bric 的義大利文是Bricco，解釋為高聳的位置。Fiasc 是位在 Castiglione Falletto 的葡萄園 Fiasco的方言 , Bric del Fiasc 是 Paolo Scavino酒 莊的成名之作，在1978年Enrico說服了父親 Paolo，將 Fiasco的葡萄獨立釀酒，以釀成單一葡萄園的Barolo，自然最忠實反映Terrior的特色和潛力。事實證明了Enrico的眼光，Bric del Fiasc 得到了重視及成功，奠定了Paolo Scavino酒莊在Barolo的地位!
